Salted Caramel P.B Crunch Bars

Salty, crunchy and peanut buttery?! Yes, please!! If I don't have these stashed in the freezer at all times I go into panic mode! Well, not quite panic mode, but they are definitely something I like to have on hand at all times!
These bars whip up in a flash and have easy to find ingredients. If you've never used peanut flour before, it's a great way to lower the calorie content while still giving that great peanut flavor. Look for defatted peanut flour and make sure there is no added sugar. I use the Protein Plus brand and order it online.
The sweetener I use is a DIY recipe with xylitol, erythritol and THM pure stevia extract that is one third as sweet as regular sugar, this would be similar to Truvia. It is also close to THM Gentle Sweet or Pyure. I use it interchangeably with gentle sweet, but if you do use gentle sweet you might need a smidgen more. Another option is straight xylitol but with this you would have to triple the amount of sweetener. Use what you have, start small, and taste until its sweet enough for you! The crunch factor in these bars come from pork rinds! I throw mine into a ziplock gallon bag and just crush them with my hands until I get small pieces. Quick and easy!
Now, on to the recipe!
Ingredients: 1 c. coconut oil
1 c. defatted peanut flour
1/4 c. natural peanut butter
1 tsp. vanilla extract
1 tsp. caramel extract
1/4 tsp. sea salt
2-3 tbsp. Truvia, Gentle
sweet, or equivalent of your
favourite sweetener
2 1/2 c. crushed pork rinds
Instructions:
1. In a medium sized pot, melt the coconut oil, peanut flour and peanut butter over low heat.
2. Once its melted, remove from heat and stir in the rest of the ingredients.
3. Line a small pan or container with parchment paper. I use a larger loaf pan that measures 6 1/2 x 9 inches, but use what you have handy!
4. Place the pan in the freezer and let sit until completely solid but not rock hard. Remove from the pan and cut into pieces. Store in the fridge or freezer.
